Brownie Cookies

The perfect crinkle!

Ingredients

200g dark chocolate (70%)
125g unsalted butter
2 eggs
150g white sugar
100g brown sugar (packed)
130g flour
3 tablespoons cocoa powder
1 teaspoon baking powder
1/2 teaspoon fine salt

Instructions

Preheat oven to 350F. Add the chocolate and butter to a double-boiler and mix until melted and smooth. This takes about 5 minutes or so, after the water comes to a boil. Take mixture off the stove and cool for a few minutes while preparing the other ingredients.

Combine two eggs, white sugar, and brown sugar and beat for about five minutes with a hand-held beater or stand-mixer. When finished, the mixture will be light brown and very fluffy. Add chocolate mixture and whisk for a moment until combined.

Add flour, cocoa powder, baking powder, and salt and whisk together.

Portion out onto a cookie sheet lined with parchment paper. Optional toppings at this stage include a pinch of any of these… Flakey sea salt, finely chopped walnuts or candied ginger.

Cook for 12 minutes. Do not over-cook! This recipe makes 10 large cookies. You can shorten the baking time if making smaller cookies.
