Veggie Sauce

From the farmers’ market!

Ingredients
Note: These measurements are approximate. Please follow your heart with the quantities you choose!
2 tablespoons olive oil
1 small onion
4 or 5 cloves of garlic
1 cup zucchini
1 cup eggplant
1 cup tomatoes
handful of fresh basil
salt and pepper
cayenne, to taste

Instructions
Heat oil on medium and add the onion first. After the onion gets a bit of a head-start, add the garlic and sauté for a few minutes. Next add the zucchini and eggplant. Once they’ve had a chance to soften, add the tomatoes as well as the salt, pepper, and cayenne. Cook all ingredients together for about 15 minutes and then add coarsely chopped basil.
