2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 cup white sugar
1 teaspoon salt
1/3 cup butter, at room temperature
1 egg, lightly beaten
1 tablespoon orange zest
3/4 cup orange juice
2 cups chopped cranberries (fresh or frozen)
Instructions
Preheat the oven to 350F, and grease or line a loaf pan.
In a large bowl, mix the dry ingredients: Flour, baking soda, baking powder, and salt. In another bowl, cream butter and sugar until combined. Next add the egg, orange zest, orange juice, and cranberries, and mix until smooth.
Pour the batter into the loaf pan and bake for 65 to 70 minutes, until a toothpick comes out clean. Remove from the pan while the bread is still warm.
