
Ingredients
1 1/4 cups all-purpose flour
1 cup rolled oats
1/2 cup white sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon, heaping
1/2 teaspoon nutmeg, heaping
1 egg
3/4 unsalted butter, melted
1/2 cup maple syrup
1 teaspoon vanilla extract
1/2 cup slivered almonds
1/2 cup chocolate chips
1/2 cup dried cherries
1/2 cup unsweetened shredded coconut
Instructions
In a large bowl combine flour, oats, sugar, baking soda, salt, and spices. Stir until well-blended.
In another bowl, whisk together the egg, melted butter, maple syrup, and vanilla. Combine with dry ingredients and stir until the dough comes together. Fold in the almonds, chocolate chips, cherries, and coconut. (This recipe works well with substitutions.) Cover the bowl and refrigerate for 30 minutes.
Preheat the over to 375F and line a cookie sheet with parchment paper.
Shape dough into uniformly-sized balls (can be large or small) and flatten slightly on the cookie sheet. Back for 10 to 12 minutes until golden brown.
