Fig and Star Anise Loaf

GROUND ANISE SMELLS SO GOOD

Ingredients

1 1/4 cups milk
6 tablespoons brown sugar
zest of 1 orange
1 1/2 teaspoons vanilla extract
2 large eggs
1 cup dried figs, chopped
4 whole star anise, freshly ground

2 1/4 cups flour
2 1/2 teaspoons baking powder
1 teaspoon ground ginger (heaping if you like)
1/4 teaspoon salt

Instructions

Pre-heat the oven to 350F and grease and line a loaf pan.

Combine milk, brown sugar, orange zest, vanilla, and eggs. Whisk a bit, and then add the dried figs and star anise. In another bowl, mix the dry ingredients together: Flour, baking powder, ginger, and salt. Combine the wet and dry mixtures and then put the batter into the prepared loaf pan.

Bake for 50 to 60 minutes, until a toothpick or knife comes out clean.
