Quinoa Tabouli

Ingredients

1/2 cup quinoa
1 cup water
1 cup parsley, finely chopped
1/2 cup fresh mint, chopped
1 cup cherry tomatoes, halved
1 cup cucumber, peeled and diced
1/4 cup fresh lemon juice
2 tablespoons olive oil
1/2 teaspoon salt
pepper to taste

Instructions

In a small pot, combine quinoa and water. Bring to a boil and then reduce heat to love. Cover and simmer for 15 minutes until quinoa is tender.

Meanwhile, toss the parsley, mint, tomatoes, and cucumber in a large bowl.

Once the quinoa is cooked, take it off the heat and let it cool. (You can put it in the fridge for a few minutes to cool it down more quickly.)

Toss the quinoa with the vegetables, lemon juice, olive oil, salt, and pepper.
