Best Pancakes

Ingredients

1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon sugar

1 cup milk
2 eggs
1/2 teaspoon vanilla
2 tablespoons butter, melted
cinnamon and nutmeg, to taste

1/2 cup blueberries (or saskatoons, chocolate chips, etc.)

Instructions

Sift the dry ingredients together. In another bowl, combine the wet ingredients and whisk.

Mix the dry and wet ingredients together until smooth, and then add berries or chocolate chips. (Or, instead of mixing berries or chocolate into the batter, you “plip” them onto the batter once in pan.)

Bake in a frying pan until golden. These pancakes are also delicious as leftovers, warmed up in the toaster.
