
Ingredients
6 cups grated zucchini
2 teaspoons salt
1 tablespoon fresh basil, minced
1 tablespoon fresh parsley, minced
2 eggs
1/2 cup parmesan cheese
1/2 cup flour of your choice
3 cloves of garlic, minced
salt and pepper to taste
2 tablespoons olive oil
Instructions
Grate the zucchini into a colander and mix with 2 teaspoons of salt. Allow this mixture to sit over a bowl to drain for about 10 minutes. Meanwhile, mix all other ingredients together. After the zucchini is done draining, squeeze out remaining moisture with a clean towel and then add zucchini to the bowl with the other ingredients. Mix well. Heat olive oil in a frying pan and flatten tablespoon sized dollops of batter onto the pan on medium heat. Pan fry until golden brown on each side, about 2 to 3 minutes each.
