
Ingredients
3 tablespoons olive oil
3 tablespoons lemon juice (or white wine vinegar)
2 tablespoons dijon mustard
1/2 teaspoon salt
1/8 teaspoon black pepper
1 large fennel bulb, thinly sliced
3 large carrots, shaved with a vegetable peeler
1/2 cup pistachios, shelled and unsalted
1/3 cup fresh parsley, chopped
Instructions
In a large bowl, whisk together oil, lemon juice, mustard, salt, and pepper. Add fennel, carrots, pistachios, and parsley. Enjoy!
