Ginger-Orange Cookies

Orange zest is the star of this recipe!

2 1/4 cups flour
1/4 teaspoon salt
1 teaspoon baking soda
1 heaping tablespoon ground ginger
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

3/4 cup unsalted butter, softened
3/4 cup brown sugar
1 large egg
zest of one orange
1/3 cup molasses

Preheat oven to 350 degrees Fahrenheit.

Measure the dry ingredients into a mixing bowl: Flour, baking soda, salt, ginger, cinnamon, nutmeg. Set aside for now.

Combine the butter and brown sugar, and stir until smooth. Add the egg, and beat until well-combined. Then mix in the orange zest and molasses. Slowly combine the dry and wet ingredients together. Stir until just mixed in.

For each cookie, drop one tablespoon of dough onto a parchment-lined cookie sheet, leaving at least one inch between cookies. Bake in the middle rack of the oven for about 10 minutes.
