
All measurements are approximate. This recipe is very forgiving re: omissions and substitutions.
3 cups oats
1 cup pumpkin seeds
1 cup sunflower seeds
1 cup unsweetened coconut chips
1 cup sliced almonds or other nuts
1/4 cup sesame seeds
1/4 cup flax seeds
1/2 teaspoon salt
1/2 cup maple syrup
1/2 cup olive oil
1 cup raisins or other dried fruit
Preheat the oven to 300F, and line a baking sheet with parchment paper.
In a large bowl, combine oats, pumpkin seeds, sunflower seeds, coconut chips, almonds, sesame seeds, flax seeds, and salt. Stir to mix. Add maple syrup and olive oil and stir until well combined. Spread evenly on the prepared pan. Bake for 45 minutes or so (stirring every 15 minutes) until the granola is golden brown and toasted.
Take granola out of the oven and cool for a bit. Then add dried fruit.
