Pumpkin Muffins

A dozen muffins will disappear quickly.

Ingredients

1 3/4 cups flour
1 cup white sugar
1/2 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves

2 large eggs
1 (15 ounce) can of pumpkin puree (not pumpkin pie filling!)
1/2 cup coconut oil (canola oil works as a substitute)
1 tablespoon milk
1 teaspoon vanilla extract
3/4 cup raisins

Instructions

Preheat oven to 375. Grease muffin pan or use paper liners.

In a medium bowl, combine the flour, sugar, brown sugar, baking soda, baking powder, salt, and spices. Stir until well combined.

In a small bowl, combine the eggs, pumpkin puree, coconut oil (heated until it becomes a liquid), milk, and vanilla. Whisk to combine, then add this mixture to the dry ingredients. (The batter will be thick.) Then add the raisins.

Scoop the batter into the muffin pan. Then bake for 22 to 24 minutes, or until a toothpick inserted into the centre of a muffin comes out clean. This recipe makes approximately a dozen muffins.
