Chocolate Mug Cake

Ingredients

Wet
2 1/2 tablespoons unsalted butter, melted
2 tablespoons milk
1 tablespoon + 1 teaspoon oil (grapeseed works well)
1/4 teaspoon vanilla extract
1 egg

Dry
1/2 cup white sugar
1/3 cup + 2 teaspoons flour (gluten free flour works well too)
2 tablespoons + 2 teaspoons cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons mini chocolate chips

Instructions

Whisk melted butter, milk, oil, vanilla, and egg together in a bowl. Mix sugar, flour, cocoa powder, baking powder, and salt together in a separate bowl. Combine wet and dry ingredients, and stir in chocolate chips.

Divide the batter evenly between two mugs. Microwave the mugs until the cakes rise and puff up. Start with 1 minute… If it looks too raw, continue with 15 second increments until the top and sides have set. (My cake was cooked enough in 1 minute.) Let sit for a few minutes to cool before eating.
