Honey Rosemary Potatoes

A very versatile side-dish.

Ingredients
3 cups potatoes (diced)
1 tablespoon olive oil
salt and pepper, to taste
1 tablespoon fresh rosemary, coarsely chopped
1 tablespoon honey

Instructions

Boil potatoes for about 12 minutes, until slightly soft. Then heat potatoes in a frying pan with some olive oil. Add salt and pepper and fry on medium-high heat for 8 to 10 minutes until the potatoes are cooked on the inside and crisp on the outside. Then add rosemary and a dollop of honey and stir until evenly distributed.

These potatoes are delicious when eaten right away, and wonderful as leftovers. (The flavours intensify overnight.)
